You’ve likely heard all about the no carb cloud bread we’ve been raving about, but I added a twist to the recipe and the result is amazing! I’ve taken the good ol’ cloud bread and added just two tablespoons of American Heritage Chocolate and came up with an old fashioned, guilt free, low carb, chocolate fix! Doesn’t this look divine?
I am going to share the simple recipe below, but first I’ve got to tell you about the chocolate that makes this recipe so tasty! American Heritage Chocolate is an authentic historic line of products—developed from chocolate recipes from the 1750’s—that celebrates chocolate’s important role in the lives of Americans during the 18th century. Chocolate in the 1700’s wasn’t like the chocolate we think of today, it was primarily a thick drink that is reminiscent of what Thomas Jefferson, George Washington, and Ben Franklin would have enjoyed in their day!
There wasn’t sugar or milk in chocolate back then, it was all natural ingredients and exotic spices! Since American Heritage Chocolate Company uses recipes from the 1750’s the chocolate drink powder I used in this cloud bread dessert really makes it unique. Today we can use this old fashioned chocolate in our modern day baking replacing semi sweet chocolate at a one-to-one ratio. Check out the texture of this chocolate drink! It is unlike any cocoa powder I’ve ever used before-you can almost see the different flavors in it! I couldn’t wait to start experimenting with it on the cloud bread.
With just 4 simple ingredients and a mixer I had these American Heritage Chocolate Cloud Breads whipped up in no time!
- 3 eggs, separated
- 3 Tablespoons cream cheese
- 2 Tablespoons American Heritage Chocolate Drink Powder
- ¼ teaspoon baking powder
- Preheat oven to 300 degrees Fahrenheit (150 degrees Celsius)
- Separate the eggs, there must be no yolk in the white.
- In one bowl, mix together the egg yolks and cream cheese until smooth.
- In the second bowl add 2 Tablespoons American Heritage Chocolate Drink Mix and 1/4 teaspoon of baking powder to the whites. Beat the whites on high speed until they are fluffy, form a nice peaks and hold their peaks. See the first photo in the collage below.
- Slowly fold the egg yolk mixture into the egg whites and mix carefully, you don’t want to break the fluffiness of the egg whites too much.
- Do this as quickly as possible or the mixture may start melting – Spoon the mixture into 10-12 even rounds onto lightly greased baking sheet see photo 2 in collage below
- Bake for 17-20 minutes on the middle rack. Then broil (cook the top) for 1 minute and watch it until they become nice and golden brown. At this point make sure you watch them so they don’t burn
- Remove from the oven and let cool and enjoy!
Check out the last photo in the collage below, you can see there is a bit of chocolate in every bite! Yum!
I used farm fresh eggs (like literally pulled them out of my chicken coop three minutes before I made this recipe) so my chocolate cloud bread turned out yellow due to the yolk color of brown fresh farm eggs. If you use white eggs purchased in a store, the final chocolate cloud bread will be much lighter in color. Then it was time to assemble my guilt free chocolate dessert! I whipped up some fresh whipping cream, grabbed a handful of raspberries that my Mom-in-law had brought over from her garden and viola this delicious low carb dessert was finished! Well almost finished. I garnished the dessert with a few American Heritage Chocolate Block shavings to take it up a notch!
I recently attended an American Heritage Chocolate making class in Historic Philadelphia-see the blog post here where I learned that there is a science behind taste buds and chocolate! What is incredibly fascinating is that different people pick up different tastes from the chocolate, so the taste will be unique to each person that tries it! While drinking the same batch of chocolate, I picked up chili pepper, anise, and cinnamon. My Mom-in-law on the other hand only tasted cinnamon!
The American Heritage chocolate is flavored with a blend of spices and ingredients available during colonial times, including cinnamon, nutmeg, chili pepper, orange, anise and vanilla. This would make for a fun conversation if you were to serve this dessert at a party with guests-you’ll learn all about their taste buds! Speaking of taste buds, my 8 year old’s taste buds thought this was delicious. I took one bit of it, offered to each of my kids to take a bite, left the room to get the baby up from her nap and when I returned the entire thing had been scarfed down by my 8 year old! That of course led to a very sad 9 year old and 5 year old who didn’t get to try it. Within seconds I was able to put together another chocolate cloud bread dessert, this time I used cherries!
Since American Heritage Chocolate is Kosher-certified, made without dairy, wheat, peanuts,or tree nuts, and is made in a facility that does not contain peanuts and tree nuts even people with food allergies can enjoy it!
