There is no better way to start of your day than with a healthy wholesome meal. Here is a new way to take breakfast to a whole new level. Everyone needs to try out these Super Power Protein Pancakes that I have been working on. I came up with two versions both of which are packed with nutrition, low in carbs, and gluten free.
These are light and fluffy pancakes with Cottage Cheese Recipe. No more of that over-stuffed pancake feel afterwards! So delicious!
I have made these several times and was able to experiment with the mixture. Yesterday I added some spinach to the mixture for green color. Note: if you want to surprise your kids with green pancakes for St. Patricks day breakfast, you will need to blend the mixture in a blender and break all the spinach pieces into a smooth consistency.
Ingredients for Fluffy Low Carb Cottage Pancakes
- 3 eggs
- 1/4 teaspoon baking soda
- 1 cup cottage cheese
- 1 tablespoon sugar or your favorite sweetener ( I used Organic coconut palm sugar)
- 1/2 cup Gluten free flour (Or you can add instead 1/4 cup of all purpose organic flour and 1/4 cup of Almond meal)
Optional – 1/4 tsp salt to taste.
Combine all the ingredients together in a medium bowl and mix using the hand mixer for about 1-2 minutes. Do not worry about cottage cheese bubbles as they will not be noticeable once the pancake is being cooked. Use cooking spray or Avocado oil to grease the pre-heated skillet pan. Add 3-4 even rounds onto the heated pan and cook for about 1 or 2 minutes on one side until golden brown and it’s easy to flip and then another minute or two on the other side.
They should not be difficult to flip and they should look fluffy and thick.
Now if you decide to give green pancake a try, add eggs to your blender and 10-12 spinach leaves. Blend until spinach leaves are broken and the consistency is smooth. Then add flour and other ingredients and mix using hand mixer. I noticed if you mix the entire green pancake mixture in the blender, it will make it too liquidy and harder to flip.
