Several years ago I tried curry chicken for the first time at a friend’s dinner party. After that first experience I couldn’t help but wonder why it took me so long to try such a delicious recipe. There were so many flavors in that curry chicken dish that I had never tried before. It was a little spicy, aromatic, tender, and bursting with unique flavor. Over the years that same friend has cooked many types of curry dishes for me and I have enjoyed each and every one of them. Recently we have been experimenting with our own curry chicken dishes at home. The first one we tried came out okay, but it was nowhere near as good as my friends curry chicken. I inquired with him to ask what we were doing wrong. After discussing the ingredients I was using we realized that my dish was missing some key components. Those ingredients that were missing were ginger, turmeric, and cloves.
After re-tooling the ingredients I went to work on creating a quick and easy curry chicken and rice recipe that my whole family would enjoy. As you can see by the photo my recipe isn’t just about curry chicken and rice. I included carrots, yellow potato, sweet potato and scallions.
The rice was cooked in my new rice cooker, which makes the best rice ever. I swear I don’t know how I potboiled rice all of these years. The rice cooker makes rice that is moist, soft, and fluffy. If you don’t have one already you should go out and get a rice cooker. They are inexpensive, easy to use, and can also be used to steam vegetables.

Ingredients for curry chicken stir
2 tablespoons olive or sesame oil
1 pound boneless skinless chicken thighs, cut into 1-inch cubes
1 medium onion, diced
2 cloves of garlic, chopped
2 medium carrots, peeled and cubed (or half a bag of baby carrots)
2 medium red or yellow potatoes, peeled and cubed
1 large sweet potato, peeled and cubed
3 cups water
2 Tablespoons curry powder
1 teaspoon Turmeric powder
Optional: Grate 2 Teaspoons fresh ginger root and grind 2 cloves.
Diced chives or scallions, to garnish
Steamed white rice, to serve
Warm the olive oil over medium-high heat in a large pot or Dutch oven. Add in the boneless cubed chicken and diced onions, and sauté until the chicken is nicely browned on all sides, 4 to 5 minutes.
Add the carrots, potatoes, sweet potatoes, garlic, water and curry and turmeric powder to the pot and mix well. Bring to a boil and then turn down to a medium boil and let cook for another 8 to 10 minutes, or until the potatoes are cooked through.
Serve over rice and enjoy!
The entire stir (dinner for my family) was ready in 30 minutes. While rice was cooking in the rice cooker, I was able to stir up my delicious dinner.
