Have you ever tried the celery root salad?
I haven’t until last Friday when my Turkish friend invited me for dinner. Among some yummy Turkish appetizers I noticed a white creamy salad dish that tasted very interesting. She said it was a celery root salad. I have never had celery root before, in fact I didn’t even know that I could eat it. My friend told me that in Turkey they eat the celery root all the time, in fact they don’t even sell the green part of the celery. She said that they only discovered the green part of the celery when they moved to the United States. I was very surprised that they don’t eat green part of the celery in Turkey and was amazed at the celery root salad that had the crisp and creamy white flesh with a slight nutty flavor.
I immediately googled about the celery root and found that it has many health benefits, vitamins, fiber, anti-cancer function, vitamin K and much more. Here are more Celeriac health benefits and nutrition facts. I asked for a recipe and asked what supplies do I need and where can I get the celery root? The celery root I got from my local Chinese owned supermarket. It was $0.99 per pound for a huge and heavy head of celery root. I think I chose the 2 pound one.
How to make a Celery root salad.
It’s actually easier than I thought. The only difficult part was to shred the celery root ( I hate shredding hard vegetables)
Celery root head, any kind of plain yogurt, mayo and walnuts (optional)
Wash the celery root head. Peel it. Cut in few pieces that would be comfortable for your hands to hold and to shred. Once the desired amount is shredded, add to a bowl. Add 2 tablespoons of yogurt, 1 tablespoon of Mayo, sprinkle the desired amount of salt and pepper and add about a handful of walnuts.
PS: I over added yogurt so mine came out a bit more watery and creamy. To my surprise, my celery root salad was not just a salad, but turned out it is a great dip too.

PS: After sitting in the refrigerator for 2 days, I noticed that the watery yogurt has separated at the bottom of a bowl and I was able to drain extra liquid. The salad was actually tastier than freshly made. Today I had my celery root salad on top of my pasta with marinara and meat sauce. Yum.
