This past Saturday evening we invited some friends over for my husbands delicious hot wings. Since the hot wings were going to be considered the main course I thought it was a good idea to prepare some appetizers to eat before we eat the hot wings. I was thinking about using some typical side dishes and turning them into appetizers. Usually when you think of rice dishes you picture them accompanying a main course of fish, chicken, beef, or tofu. Well I had an idea to create a rice dish that wasn’t to heavy and would go good as an appetizer.
I decided to look in my old recipes. Among other very useful things I found my notebook with recipes that I wrote down while still living in Estonia. It was there that I found the salad. I don’t remember why the salad has the name Anastasia, I remember my mom’s friend made it and gave me the recipe. But most Russian salads have interesting or unusual names. The most important part is that my husband and my friends loved it. It is best if served hot or warm.
Anastasia – Hot Muti-layered Rice Salad with ham, pineapple and vegetables. Recipe
Ingredients for layered rice salad:
2 cups of cooked rice
200g ham (half a pound. Sliced) (or cooked shrimp)
1 can of pineapple, chunks
1 can of corn,
Directions: Boil the rice. (For 1 cup of rice add 2 cups of water) I used Della Rice Jasmine white rice. Average cooking time is about 20 minutes. Add salt to your liking.
Cut tomatoes, cucumber, ham and pineapple into small-medium sized cubes (as pictured above).
Divide all products in 2 halves.
Start layering in your heat proof glass dish or corningware.
First layer on the bottom is rice. Press it firmly with the flat spatula. Place a little mayonnaise, sprinkle with cheese, vegetables, ham, pineapple, mayonnaise and cheese again. This first layer. Press firmly again with spatula.
The second layer in the same way: rice, mayonnaise, cheese, vegetables, pineapple, mayonnaise and cheese on top.
Preheat the oven to 375 degrees. Bake it for 20 minutes. Take it out of the oven. It is ready to be served and looks like this. The cheese is nicely melted. The ingredients inside are nicely baked. The flavor is in.
To serve, simply cut like you slice a piece of cake, then help with spatula and spoon to pick up all the ingredients. Season with salt, pepper, dill and other herbs to your liking.
Preparation time: 30 minutes
This hot salad is great for lunch, as a snack, on a festive table such as Superbowl, Birthday, New Year, Christmas, for dinner or as an unusual appetizer for unexpected guests.
