Have you ever had something really tasty and you just wanted to share it with the world? Well it happened to me yesterday evening when I took a taste of some fresh fried potatoes that I made. Sitting on the stove was a pan full of delicious looking homemade fried potatoes. The aroma in the kitchen was mouth watering and I knew what I had to do next. I cooked up some scrambled eggs with cheese, and heated up the potatoes. Now if you have ever eaten in a diner you most likely have seen or eaten eggs with potatoes or hash browns. For the most part they are usually pretty edible but fall behind when it comes to flavor. This was not the case with these potatoes. They were bursting with flavor and cooked to perfection. The best part about it is that they were pretty simple to make. It all started out with me frying some organic yellow onions in a variety of seasonings. Once the onions were browned I added small sliced up organic potatoes. I cooked them until they were tender but not too mushy. The end result was a tasty cornucopia of potato goodness. When I combined this to the scrambled eggs and cheese and topped it off with some organic ketchup my taste buds were in flavor heaven.
Here’s how I did it:
Ingredients: Use all organic ingredients if possible.
1 large yellow onion, chopped
2-3 cloves of garlic, chopped
5-7 medium potatoes, sliced or diced
2-3 TBS Olive oil
Salt, pepper, garlic powder to taste, rosemary and chives seasoning is optional.
Directions: Heat olive oil in medium skillet, stir-fry onions for about 5 minutes. Add sliced garlic (optional). Fry for another 5 minutes. Add your prepared sliced or diced potatoes to the pan. Stir-Fry or sauté, bringing potatoes up from bottom of pan with a spatula occasionally for even cooking and browning (about 20 min). For the tastiest results, keep adding a bit more olive oil every time you stir them.
Serve and enjoy. I enjoy my garlic potatoes with stir-fried mushrooms.
